>> 4 large apples of your choice, peeled and finely chopped
>> 1/8 cup maple syrup
>> 1/8 cup lightly packed brown sugar
>> 1/2 cup wild grape juice, reserve pulp
>> 2 tbsp arrowroot starch
>> 1 tbsp cinnamon powder
>> 1 tsp vanilla extract
>> 24 pre-made mini tart shells, (vegan tart shells if desired)
Preheat oven to 375 degrees.
Cook chopped apples, maple syrup, brown sugar, wild grape juice and reserved pulp in a pan on medium heat until the apples soften and the juice starts to evaporate. Stir occasionally to mix well.
Whisk in arrowroot starch until it is thoroughly blended with the apple filling. Add in cinnamon and vanilla and mix well.
Fill each tart shell with the apple filling and bake for 10 to 15 minutes, or until tart shells become slightly brown.
