>> 2 cups all purpose flour
>> 1 tablespoon baking powder
>> 1/2 teaspoon baking soda
>> 1/2 teaspoon salt
>> 1/4 cup unsweetened applesauce
>> 1/2 cup vegan butter, melted
>> 1 cup soy milk
>> 1 tablespoon apple cider vinegar
>> 1/4 cup granulated sugar
>> 1 teaspoon vanilla
>> 1 1/4 cups elderberries
Preheat oven to 350°F.
Mix all the dry ingredients in a large bowl.
In a separate bowl, mix all the wet ingredients.
Pour the wet mixture into the dry mixture and stir until the batter becomes just moistened; then stir in the berries. The batter will be slightly lumpy.
Pour the batter into muffin cups, and bake for about 18 to 20 minutes. Test one with a toothpick to ensure the batter is properly cooked.
Tips: Swap out the vegan butter and soy milk for butter and milk if desired.
