>> 3/4 cup burdock root, thinly sliced
>> 1 1/4 cup celery, thinly sliced
>> 1 to 2 tsp crushed red pepper flakes (optional)
>> 3 tsp sugar
>> 3 tbsp coconut oil
>> 4 tbsp Kikkoman soy sauce (or another brand)
In a bowl, soak the wild roots in cold water to help pre-soften and lessen the bitter taste (about 10 minutes). Soak the crushed red pepper flakes in some cold water for 5 minutes in a separate bowl or cup. Once each has soaked, drain water.
In a medium fry pan, heat the oil over medium heat. Add the crushed red pepper flakes, sugar and wild roots. Stir fry for one minute. Add the celery and soy sauce. Continue stir frying until the liquid as been evaporated and the vegetables are softened. If needed, add more oil and/or soy sauce.
Serve as a side dish.
Ingredient Tips: If desired add more wild roots such as yellow dock and garlic mustard. (Be sure to pre-oak them also.) Adjust oil and soy sauce accordingly. If you want more heat, add more crushed red pepper flakes.
