>> 3 1/2 cups unbleached flour
>> 3/4 cup curly dock flour (see tip below)
>> 2 tsp baking soda
>> 1 tsp salt
>> 1 tsp sugar
>> 2 cups milk
>> 2 tbsp white vinegar
Preheat oven to 400 degrees F. Place parchment paper on a baking sheet.
In one bowl, pour the milk and vinger. Mix well.
In another bowl whisk together all dry ingredients. Make a well and slowly pour in the milk mixture. With a spatula thoroughly blend all ingredients. With your hands, knead the dough for about 2 to 3 minutes. The dough will be sticky. After kneading the dough, divide it in half.
On the baking sheet place the two halves and work them into round shapes.
Place baking sheet into the oven and bake for 35 minutes.
Tip: 4 cups of curly dock seed, when thoroughly ground into flour, makes 1 cup dock flour.
