>> 1 cup softened butter
>> 2/3 cup icing sugar
>> 2 tsp vanilla
>> 2 tbsp milk
>> 3 cups unbleached flour
>> 2 cups saskatoon berries (fresh or frozen)
>> 1 cup finely chopped dates
>> extra icing sugar for dusting
Preheat oven to 325 degrees F.
Using a blender, cream together the first four ingredients. Once thoroughly mixed, blend in the flour. Mix well. Stir in the berries and dates.
Shape dough into 1" balls. Place on a parchment paper covered baking sheet. Leave about 1/2" space between balls.
Bake 15 to 18 minutes, or until slightly golden brown.
Once slightly cooled, place the balls on a wire rack and dust with as much icing sugar as desired.
