>> 3/4 cup oil
>> 1 cup brown sugar
>> 3 large eggs
>> 2 cups plain yogurt
>> 3 cups all-purpose flour
>> 2 – 2 1/2 cups quick oats
>> 2 tsp. baking powder
>> 1 tsp. baking soda
>> 1/2 tsp. salt
>> 2 cups fresh (or frozen) Saskatoon berries
Preheat the oven to 400F.
In a large bowl, beat the oil and sugar, and add the eggs one at a time, beating after each until the mixture is thick and creamy. Stir in the yogurt.
Whisk together the dry ingredients. Still dry ingredients into the wet mixture and blend well. Add Saskatoon berries.
Pour mixture into paper-lined muffin tins until about 3/4 full.
Bake for 20-25 minutes, until golden and springy to the touch.
