>> 2 cups of ramp leaves, chopped
>> 2 cups diced potatoes
>> 2 3/4 cups vegetable broth
>> 1/4 cup dehydrated onions
>> 3/4 cup milk
>> 2 tbsp arrowroot powder
>> 2 tsp pepper
>> 1.5 tbsp garlic powder
>> 4 slices of bacon
>> Salt to taste
In a frying pan, cook bacon then set aside leaving the grease in the pan. As the bacon cooks, cook the diced potatoes in a pot of water, then strain and slightly mash. Set aside.
Place the chopped ramps into the frying pan and saute until wilted. Remove and place on a plate covered with paper towel to soak up the excess grease.
In a medium pot, place the vegetable broth and bring to a boil. Reduce heat, add in the dehydrated onions, milk, garlic powder, salt and pepper. Stir well. Scoop out some of the broth using a cup and with a small whisk, whisk in the arrowroot powder. Return to the pot and make sure it is blended well.
Add the ramps and mashed potatoes, stir. Add more garlic powder if desired.
Let simmer 10 minutes. As the soup simmers, crumble the bacon.
Serve with crumbled bacon on top.
