>> 2 cups unbleached flour
>> 1 1/2 tsp baking powder
>> 3 tbsp pine powder
>> 1/2 tsp salt
>> 1/2 cup unsalted butter, softened
>> 1/2 cup shortening
>> 1 cup brown sugar
>> 1 tsp (pure) vanilla extract
>> 1 cup creamy natural peanut butter, stirred
>> 2 eggs
>> 4 oz Baker's semi-sweet or unsweetened chocolate
>> pine powder for dusting
In a medium bowl, whisk together flour, baking powder, salt, and pine powder. Set aside.
In a food processor, blend the soft butter, shortening, sugar, vanilla and eggs. Add the peanut butter. Blend on low until all ingredients are thoroughly mixed, about 2 minutes.
Scoop this mixture into the flour mixture. Using a spatula, mix until everything is well incorporated.
Preheat oven to 350 degrees.
Form the dough into golf ball sizes, then place onto an ungreased baking sheet, keeping them about 2" apart. Using the palm of your hand, slightly flatten each cookie. With a fork, press gently into the tops.
Bake for 10 minutes.
Remove from the oven and let cool on baking sheet.
In a double boiler, melt 4 oz of semi-sweet chocolate. Keep on low. Once the cookies are cool, dip them into the chocolate and place on a parchment paper covered baking sheet. Sprinkle with pine powder. Let harden, then enjoy!
