>> 8 cups mushroom broth
>> 2 cups chopped nipplewort young stems and leaves
>> 1 1/4 cups spelt pasta (not cooked)
>> 2 envelopes of onion soup mix
>> 2 tbsp garlic powder
>> 3 tsp tumeric
>> 1 tsp black pepper
>> salt to taste
In a medium size pot, bring the mushroom broth to a slow boil. Add the pasta and stir occasionally for about 10 minutes. Turn heat down so that the broth comes to a simmer. Add the nipplewort and spices.
Simmer for 30 to 35 minutes, making sure to occasionally stir.
Let cool 5 minutes, serve and enjoy!
Note:
Store-bought onion soup mix contains some questionable ingredients. If desired, make your own onion soup mix. Many recipes can be found doing a quick online search.
Tip:
If you have dehydrated mushrooms, use these to make the I used 1 cup dried mushrooms to 8 cups water.
