>> 16 cups water
>> 1 cup miso paste
>> 6 to 10 morel mushrooms, chopped
>> 2 cups chopped button mushrooms
>> 3" daikon root, quartered and sliced thin
>> 2 bunches green onions, finely sliced
>> 1 tbsp fresh minced ginger
>> 1 clove garlic, minced
>> 2 tbsp soy sauce
>> 2 tbsp rice vinegar
Place water in a pot over high heat, bring to a boil. Lower temperature to medium and add the miso paste. Whisk until totally dissolved.
Add the mushrooms and stir occasionally for 5 minutes. Add the daikon, ginger, garlic, soy sauce and rice vinegar. Reduce the temperature and simmer 10 minutes.
Add the green onions and simmer 2 minutes.
Remove from heat and serve.
