>> 4 cups water
>> 2 tbsp. dried lemon balm (or 4 tbsp. fresh herb)
>> 1 thin slice lemon
>> 1/2 tsp. minced fresh thyme leaves
>> 1 tsp. lemon juice (optional)
Boil the water. Let cool 10 minutes. Pour water in a tea pot with an infuser - then place in it, the lemon balm, lemon, and thyme.
Steep for 10 minutes (or more). If desired, just prior to serving, add 1 teaspoon fresh squeezed lemon juice to each cup.
