>> 2 cups fresh lemon balm, cut up (leaves and stems)
>> 4 litres water (about 4 quarts)
>> 2 lemons, fresh squeezed
>> sweetener of choice
Put water in a large pot. Bring to a boil then immediately reduce heat to low. Place the lemon balm in the water and stir. Let simmer for about 20 to 25 minutes.
Turn stove off and let cool. Remove the lemon balm and add in the fresh squeezed lemon juice and sweeten to taste.
Keep in the fridge up to one week. Stir before serving.
Tips: If desired use more lemon balm and adjust lemon juice. Depending on your taste buds, lemon juice can be omitted or increased.
