>> 1 box (250 grams) manicotti shells, cooked al dente
>> 2 to 3 cups spagetti sauce

>> 1 cup finely chopped lamb's quarters
>> 1 cup finely chopped kale
>> 500 grams ricotta cheese
>> 2 large eggs, beaten
>> 1 1/2 cups mozzarella cheese, shredded and divided
>> 1/2 cup Parmesan cheese, grated
>> Salt and pepper to taste
>> Fresh parsley to garnish
In a medium size bowl, combine lamb's quarters, kale, ricotta cheese, eggs, 1 cup mozzarella cheese, Parmesan cheese and salt and pepper to taste. Mix well.
Stuff each cooked manicotti shell with filling mixture.
In a baking dish, spread a small layer of spagetti sauce on the bottom evenly. Place the stuffed manicottis over the sauce. Be sure not to put one manicotti on top of another.
Top with remaining sauce and leftover mozzarella cheese.
Bake at 350 degrees F for 30 minutes.
Let cool 5 minutes then serve. If desired, garnish with fresh parsley.
Ingredient Tip: If you do not have access to lamb's quarters, swap it out with spinach. Also, you can decrease the amount of lamb's quarters and add to it other wild greens such as alfalfa, plantain, dandelion, etc.
