>> 1 pie crust, not cooked (regular or vegan)
>> 3 cups elderberries
>> 1 cup aronia berries
>> 3/4 cup organic cane sugar
>> 1/4 cup cold water
>> 4 tbsp arrowroot starch
>> 3 tbsp chia seeds
>> 1 tbsp lemon juice
Preheat the oven to 375F.
Place berries and sugar in a saucepan. Whisk the arrowroot starch with cold water until it is thoroughly blended, then add it to pan. Cook over medium heat, stirring occasionally, until the mixture thickens. Remove from heat and add the chia seeds and lemon juice. Mix well. Set aside to allow the mixture to thicken and cool, about 20 minutes.
Scoop out the berry mixture into the pie crust, if using a frozen shell, be sure it is thawed.
Bake the pie for 40 to 45 minutes, until the crust is browned.
Remove from oven and let cool for minimum 2 hours. The pie must totally cool to allow the filling to become firm.
Serve at room temperature or if desires, warm slightly before serving.
