>> 1 1/2 cups elderberries (dried, fresh, or frozen)
>> 6 cups water
>> 2 Ceylon cinnamon sticks
>> 10 whole cloves
>> 2 tablespoons (finely chopped) fresh ginger
>> 2 cups unpasteurized honey
In a large pot, bring the elderberries, water, cinnamon, cloves, and ginger to a boil. Reduce the heat, cover, then simmer until the liquid has reduced by half. This will take about 40 to 45 minutes.
Remove from heat, then let the liquid to cool, but making sure it is still slightly warm. Using cheese cloth or a fine mesh strainer, drain the liquid. Make sure to press all the liquid out of the berries.
Add the honey and mix well.
Store in an airtight glass container in the refrigerator. This syrup will keep 6 to 8 weeks.
