>> 1 cup unbleached flour
>> 1 tbsp baking powder
>> 1 cup kombucha
>> 1 tsp cinnamon
>> pinch of salt
>> 50 daylily buds
>> oil of choice for frying
In a medium-sized bowl, whisk the flour, baking powder, and salt until mixed. Add the kmobucha and gently whisk, but do not over mix. (Having a few small lumps in the batter is fine.) Batter each bud and set aside.
Pour oil into a skillet, it should be about 1/2 inch deep. Heat the oil until about 350 degrees F, or when it begins to sizzle.
Frying in small amounts is best. Using tongs, place each battered bud carefully into the oil to avoid backsplashing. Fry the buds until golden brown (about a minute), then flip over and fry for another minute (or until golden brown).
Remove the frittered buds from the oil and place them on a sheet of paper towel to absorb any excess oil.
Serve warm and drizzle with some maple syrup or lightly sprinkle with icing sugar.
