>> 1 cup softened butter
>> 1 1/4 cup organic cane sugar
>> 4 eggs
>> 1 tsp almond extract
>> 2 cups unbleached flour
>> 2 tsp baking powder
>> 1 cup wild berry sauce
Preheat oven to 350 degrees F.
In large mixing bowl, cream the butter and the sugar. Add the eggs. Beat until light and fluffy.
Add the almond extract.Stir in the flour and baking powder. Mix until smooth.
Grease a 13 by 9" cake pan. Scoop the mixture into the pan.
Spoon and swirl the wild berry sauce throughout the cake batter.
Bake for 45 to 50 minutes - until the centre is properly cooked. If desired, once cooled, dust with confectioners sugar.
If you do not have wild berry sauce, any fruit sauce should suffice.
