>> 12 hosta leaves
>> 1 to 2 large onions
>> 3 to 4 tbsp finely chopped lamb's quarters
Cook bacon only half way so it is still workable. Drain excess fat. Slice each slice of bacon lengthwise, then set aside.
As your bacon cooks, in a large pot of boiling water, place half the hosta leaves in the water for 5 minutes. Stir occasionally with a wooden spoon while they are in the water. Remove, place in a strainer and pour cold water over them. Then do the remaining leaves. Set aside until cool. Cut off leaf petiole.
Cut onion(s) in thin slices.
Preheat oven to 350 degrees F.
Take one leaf and place it front side down. Toward one side, place one lengthwise piece of bacon, a sprinkling of lamb's quarters and some onion slices. Roll tight. When rolled, wrap a piece of bacon around it and hold it in with toothpicks. Place on parchment paper covered baking sheet. Repeat with each leaf.
Place baking sheet into pre-heated oven and bake 8 to 10 minutes.
Remove from oven and serve as an appetizer.
