>> 2 tbsps butter, softened
>> 2 eggs, light beaten
>> 1 1/2 cups brown sugar
>> 2 cups unbleached flour
>> 4 tbsps hot apple juice (or boiled water)
>> 2 tsp baking soda
>> 2 tsp vanilla
>> 1 cup peeled and finely chopped apple
>> 1 cup autumn olive berries
>> 1/2 cup chopped pecans or walnuts (if desired)
Preheat oven to 350 degrees F. Grease muffin cups or line with paper muffin cups.
Combine all ingredients in order given. Be sure that all ingredients are well blended.
Fill muffin cups 3/4 filled. Bake 20 to 25 minutes until a toothpick comes out clean.
Ingredient Tip: If you do not have autumn olive berries swap them out by doubling the apples.
