>> 4 cups cubed giant puffball
>> 1 1/2 cups thinly sliced green onions
>> 1 cup peanuts, roasted
>> 4 cloves garlic, mashed
>> 1 tbsp grated ginger
>> 1 jalapeno pepper, sliced thin (optional)
>> 1 tsp red chili flakes
>> 1/4 cup vegetable broth
>> 2 tbsp olive oil
>> 3 tbsp sesame oil
>> 1 tbsp soy sauce
>> 1 tbsp rice vinegar
Place the oils, garlic, ginger, soy sauce and rice vinegar in a cup and mix well. Set aside.
Pour the vegetable broth into a skillet and add green onions, jalapeno and red chili flakes; simmer over medium heat for 10 minutes. Then add the puffball mushrooms and oil mixture, stir well. Stir frequently for 10 minutes. Then add the peanuts and stir for about ten to twenty seconds.
Serve as a side dish or place over pre-cooked rice and serve.
