>> 2 cups aronia berries (fresh or thawed)
>> 2 cups shredded zucchini (squeeze out excess liquid)
>> 3 eggs
>> 1 cup oil
>> 3 tsp lemon extract
>> 3 cups unbleached four
>>
>> 1/3 cup sugar
>>
>> 2 tbsp cinnamon
>>
>> 1/4 tsp baking soda
Preheat oven to 350 degrees F.
In one bowl, sift together all the dry ingredients.
In another bowl, place all the wet ingredients and mix well. Add the wet ingredients into the dry and mix well. Fold in the zucchini making sure the zucchini is blended well.
Stir in the aronias until mixed.
Grease two loaf pans. Place equal amounts of batter into each pan.
Put in oven and bake 60 to 70 minutes. Check each loaf with a toothpick making sure it comes out clean.
