>> 1 1/2 cups oats
>> 1 cup water, boiled
>> 1/2 tbsp baking powder
>> 1 tbsp cinnamon
>> 2 eggs
>> 2 tbsp unpasteurized honey
>> 1 tsp vanilla extract
>> 1/2 cup plain yogurt
>> 1/4 cup butter, melted and cooled
>> 1 cup aronia berries
>> 1 small apple, finely chopped
Preheat oven to 350 degrees F.
Place oats in heat resistant bowl. Add water, stir, and let sit 5 minutes.
Add in all ingredients except the fruit. Hand mix until all ingredients are well blended. Stir in fruit, and mix well.
Grease a loaf pan. Pour in the mixture. Bake for 50 minutes; test the center with a knife. If it comes out dry, it is done. If not, bake another two minutes, test it, and repeat again until the center is dry.
Thoroughly cool.
Tips:
No aronia berries? Use one cup of any wild or store bought berries. (Aronias and elderberries were used in this recipe.) If you simply have to have more sweetness, use 1/8 cup honey instead of the 2 tablespoons (or another sweetener).
