>> 2 cups agaricus mushrooms, finely chopped
>> 2 small onions, finely chopped
>> 1 large celery stalk, finelychopped
>> 1/2 large green pepper, finely chopped
>> 4 cloves garlic, minced
>> 1 chicken breast, cut up small
>> 1 cup parboiled rice
>> 1 3/4 cup water
>> salt and pepper
>> oregano
>> butter for sauteeing
>> grated cheese
Place the water into a pot over medium high. As the water starts to boil, add the rice. Bring to a boil then reduce heat to medium low. Stir occasionally until done. Set aside. (I added 2 tbsp miso paste to the water for added flavor.)
As the rice is cooking, preheat oven to 350 degrees F.
In a frying pan on the stove, saute the onions, celery, and green peppers for 5 minutes, then add mushrooms. Once all the vegetables are soft, remove from heat and set aside. In the same pan, add a little oil and cook the cut up chicken.
Place the cooked rice, vegetables and chicken into a bowl and mix well. Add salt and pepper if desired. Put mixture into a 13x9 casserole dish. Place in oven and bake for 10 minutes; then sprinkle as much or as little grated cheese on the top and sprinkle oregano on the cheese if desired. Put back in the oven and bake another 10 minutes. If you like crispy cheese, broil but be sure to keep watch so that it does not burn.
Let cool 5 minutes, cut and serve.
