>> Premade pizza shell
>> 8 cups of wild greens
>> 4 or 6 fresh basil leaves, chopped
>> 4 garlic cloves, finely chopped
>> 2 medium onions, finely chopped
>> 2 cups pizza sauce (homemade or store bought)
>> 1/4 cup grated parmesan cheese
>> 2 cups grated mozzarella cheese (optional)
Preheat oven to 425° F.
Chop greens and set aside.
Sauté onions and garlic in oil or butter for 2 minutes. Add in all the wild greens and sauté 3 minutes. Set aside and slightly cool.
Spread pizza sauce evenly on premade pizza shell leaving a small border around the edge.
Spread out the fresh basil and sauteed wild greens over the pizza sauce. Sprinkle the grated parmesan cheese on top. If desired, top with grated mozzerella.
Place in oven and bake 10 minutes. If you used mozerella cheese, if desired, briefly broil the pizza to crisp up the cheese.
Remove from oven, cool for 5 minutes. Slice and serve.
Suggested greens to use: plantain, dandelion, wild lettuce, garlic mustard and lamb’s quarters.
Ingredient Tips: If desired, swap out the pizza sauce for your favourite pesto.
